INGREDIENTS:

🍏 1 tsp each ground coriander, cumin, sweet smoked paprika, fennel seeds

🍏 8 tsp extra virgin olive oil

🍏 1 tsp table salt

🍏 4 x 150 grams Atlantic salmon

🍏 1 cup pineapple pieces

🍏 2 Lebanese cucumbers, cut to wedges

🍏 180 grams uncooked penne pasta

🍏 1 long red chilli, seeds removed, diced

🍏 1 cup fresh coriander

🍏 Juice of 1 lime

METHOD

1. Cook and drain pasta

2. Meanwhile, combine the spices and 5 tsp oil into a large bowl. Add the fish and turn to coat it.

3. Heat 3 tsp oil in a frypan over medium heat and cook fish for 3-4 min each side until almost cooked

through. Remove from pan and allow to cool a bit. Then cut into cubes.

4. Meanwhile, place pineapple, cucumber, chilli and lime juice into a bowl and toss.

5. Serve one cup of cooked pasta onto each plate. Evenly serve cucumber salad on top of pasta. Evenly distribute salmon wedges on top. Garnish with coriander.
