Low-Carb Hearty Beef and Vegetable Soup


  • Approx. 1.5kg of meaty beef bones
  • 8 cups water
  • 1 cup diced carrots
  • 1 cup sliced celery
  • 1 cup diced capsicum (any color)
  • 2 onions, finely chopped
  • 3 teaspoons of minced garlic
  • 2 teaspoons dried thyme
  • 4 generous pinches of sea salt
  • Ground pepper to taste


  • Slow cooker
  • Chopping board and knife


  1. Assembly:
    • Add all ingredients to the slow cooker.
  1. Cooking:
    • Set the slow cooker to low heat and cook for 6-8 hours or until the beef is tender and flavours meld.

    • Adjust salt and pepper to taste.
