The Recipe: 2-Minute Immersion Blender Mayonnaise

The secret weapon here is an immersion blender (stick blender) and a wide-mouth glass jar. This method is practically foolproof and creates a perfectly thick, luxurious emulsion every single time.

Ingredients


  • 1 large egg (preferably free-range or organic, must be at room temperature)
  • 1 cup (250ml) light olive oil or avocado oil (Note: Do not use extra virgin olive oil; the blending process makes it taste incredibly bitter and overpowering!)
  • 1 tablespoon fresh lemon juice (or apple cider vinegar)
  • 1 teaspoon Dijon mustard (acts as a natural binder and adds a great depth of flavor)
  • A generous pinch of sea salt

 

Instructions


  1. Layer the ingredients: Crack the egg into the bottom of a tall, wide-mouth jar (or the beaker that came with your stick blender). Gently pour the lemon juice, Dijon mustard, sea salt, and finally the oil on top. Let everything settle for about 30 seconds so the egg sits securely at the very bottom beneath the oil.
  2. Position the blender: Place your immersion blender firmly over the top of the egg yolk at the absolute bottom of the jar.
  3. Blend from the bottom up: Turn the blender on high speed. Do not move it yet. Hold it perfectly still at the bottom for about 10–15 seconds. You will see a thick white emulsion start to form instantly and creep up the sides of the jar.
  4. Slowly pull upward: Once most of the bottom is thick and white, slowly tilt and raise the blender over the course of 10 seconds to pull the remaining oil down into the mix.
  5. Adjust and Store: Taste and add an extra pinch of salt or a splash of lemon juice if desired. Secure with a lid and pop it straight into the fridge.

The Golden Rule of Homemade Mayo: Room temperature ingredients are your best friend. If your egg is straight out of the fridge and your oil is warm, the emulsion is far more likely to split. If you are short on time, simply sit your whole egg in a bowl of warm tap water for 2 minutes before cracking it.
